What is a pancake?


A pancake is a flat cake, often thin and round, prepared from a starch-based batter that contains flour and milk.


Why are they called pancakes?


They are cakes and they are cooked in pans.


My Grandma was a fabulous cook! She used to prepare pancakes for us. I can never forget the smell in the air of the fried pancake she made.


In this recipe, we are going to make purple sweet potato pancake.


Purple sweet potato pancakes are EASY healthy pancakes that are light and fluffy and only calls for a few simple ingredients you probably have in your kitchen.


Typical pancakes are made with white flour, which is low in fiber.


When we are making pancakes from scratch we can have a lot of healthy qualities. First, we can make them with whole-wheat flour, which will add heart-healthy filling fiber.  Here we use all-purpose flour and whole wheat. A combination of both is nice too.


We can also add extra-healthy toppings, like fruit to boost vitamins and fiber and nuts to transform them into a nutritious breakfast that will help you stay full through the morning.


In this recipe, I used kiwis, strawberries, and blueberries. Sprinkle with chopped walnuts, and drizzle the whole stack with honey.


Let’s try!  Add some sweet potatoes to your pancakes, The sweet potato helps make these pancakes very soft and easy to chew. When served in small pieces, are a great breakfast for kids and they will definitely have a healthy meal to start their day!


Notes :

You must be wondering why,purple sweet potato turned blue-green after frying. Don’t worry, it’s because the anthocyanin that provides the color reacts with baking soda (or baking powder, or anything alkaline) and turns the resulting mixture of beautiful blue-green.


The light sour taste of buttermilk is similar to yogurt, which contain lactic acid. When using buttermilk and baking powder or baking soda together, the product will be especially fluffy. It is not easy to buy buttermilk and you can make it yourself by mixing 1 tbsp of lemon juice or white svinegar with 1 cup of milk. After 5 minutes, the milk will curdle and it is ready to use. Use low fat or skimmed milk to reduce calorie intake.

Ingredients:


Dry

100g whole wheat flour

100g all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt


Wet

90ml sweet potato puree

160ml buttermilk

80ml water

3 tbsp vegetable oil


Method :

Sweet potato puree

Peel the skin, cut into small pieces, boil over simmering water for about 15 minutes. Draine the water and smashed it.


In a big bowl, add 100g whole wheat flour, 100g all-purpose flour, 1 tsp baking powder, 1/2 tsp baking soda and 1/4 tsp salt, combine thoroughly.

In another bowl, whisk together 90g sweet potato puree, 160ml buttermilk, 80ml water and 3 tsp vegetable oil. Set aside until ready to cook.

Add the dry ingredients to the sweet potato mixture and gently fold in until combined. Do not overmix, the dough supposes to be a little runny.

Heat a non-stick pan on medium heat. Scoop a ladle into the pan, bake about 20 seconds.


When the top starts to bubble and the bottom is browned enough, flip it over to cook the other side until golden brown.

Put all fruit on top of it, sprinkle with chopped nuts, finally, drizzle with little honey ~ Enjoy !
