Pumpkin apple muffin

Pumpkin can be either baked or steamed but baking does produce the most flavor and the best puree for all of the recipes, sweet or savory!


Pumpkin by itself doesn't have much taste. But It’s incredibly healthy. Pumpkin contains a variety of nutrients especially that can improve heart health, including vitamin c, fiber and potassium.


Apples are a great thing to add to the kids menu! An apple a day, really might keep the doctor away (although, I’m not sure that anyone has ever tried it!)


I don’t really like muffin that much, but I am in love with these muffins. If a child was asked ‘ do you take these muffin to be your breakfast ? ’ the answer would be ‘ yeah! ’ I supposed. Even though they don’t look really fancy but taste awesome.


The other great part about them is the easy recipe.  Everything is just mixed together, no creaming or folding, just beat it all in a bowl and it’s done.


These delicious muffins along with a cup of coffee, milo or fresh milk is the perfect way to enjoy a wonderful morning, even the perfect treat for anytime of the day.


You can make these muffins for the party or event. They are just the perfect and healthy sweet treat that your kids will not only enjoy eating but making too!


Trust me, Kids love to bake and play in the kitchen.


Notes :


Muffins can go in the freezer – just store them in a ziploc freezer bag. They should keep for about two months.



Ingredients :


230g all purpose flour

1 tsp baking soda

1 1/4 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/2 tsp salt

2 eggs

80g granulated sugar

80g brown sugar

120ml grapeseed oil

280g pumpkin puree

60ml milk

50g shredded apple


Method :


Preheat oven to 175 c. Grease 12 muffin cups.


Split pumpkin in half. Remove seeds and strings, cut into stripes. Steam for about 30 minutes until it is soft. Smashed until smooth.




In a large bowl, mix 230g all purpose flour, 1 tsp baking soda, 1 1/4 tsp ground cinnamon, 1/2 tsp ground ginger,  1/4 tsp gound nutmeg, 1/2 tsp salt. Set aside.




Beat  2 eggs in a separate bowl, mix in 80g granulated sugar, 80g brown sugar, 120ml grapeseed oil, 280g pumpkin puree, and 60ml milk.




Fold wet ingredients into dry ingredients until just combined. Do not overmix. Fold in 50g shredded apple.





Fill each muffin cup 3/4 full, bake for 20-25 minutes, or until toothpick inserted in muffin comes out clean.
