Ever wanted to make a chocolate fruit Cake? This homemade cake is the best chocolate cake you can make to celebrate with the family on a special day. Or if you are looking for a way to impress and spoil your kid on his or her birthday, this is it!
This cake made by a stay-at-home mom. She is my sister-in-law and a mother to three kids. Her kitchen just directly opposite to my kitchen, so whenever baking, she will be around most of the time. I love seeing someone being around keeping me company and chit-chatting with me ......
“Cooking is at once child’s play and adult joy. And cooking done with care is an act of love.” – Craig Claiborne
My sister-in-law is a food lover, her specialties are preparing authentic Asian food recipes. She can cook a very simple dish very delicately. As this is her first time baking, it took her few hours to bake the cake, but she was enjoyed and happy with the result.
This cake is fabulous for so many reasons! The first being is the beauty and moist of a Naked Cake. You can see the glorious fresh fruit and sweet drizzle of a rich chocolate sauce.
The second is that is it low in processed sugar (I am using brown sugar instead of granulated sugar). Chocolate and fruit are the main flavor contributors, you can enjoy a piece, or two, without the guilt.
Wait till you try my interpretation of this chocolate fruit cake. You’re going to lick your lips, fingers, and begging for a second slice.
Try this chocolate fruit cake (you can use any other fruit too), perfect for a kid’s party. A moist chocolate layer cake filled and topped with fruits. It’s the perfect experience everybody’s going to be able to take part in and enjoy!
Baking together is fun family time.
Kitchen time can be a special parenting time. Baking together creates closer bonds and helps build lifelong memories. You can also use the time to listen, share and talk with your child.

Dry ingredients
Gradually sift 2 cups all-purpose flour directly into the mixing bowl and mix just until combined. Don’t over-mix.
Add in 1/2 cup cocoa powder, 2 tsp baking powder and 1 tsp vanilla extract. Stir well. Don’t over-mix the batter.

Remove them from the oven and let them cool in the pan for about 10 minutes. Allow them to cool completely on a cooling rack.
For chocolate ganache
Meanwhile, prepare the chocolate ganache.
Put 160g chopped chocolate and 150ml milk in a steaming pot. Wait for 2 minutes and. Stir until smooth.
Once the cake cool, use a large serrated knife, keep rotating and slowly cutting deeper inside the cake until your cake splits into two separate layers.
Filling and toppings
Spread 1/4 of your chocolate ganache on the first cake. Wait for about 10 minutes so that the ganache sets a bit.
Slice 1/2 cup of strawberries lengthwise and place them on the chocolate ganache you spread on the first cake.
Carefully place the second cake on the strawberries, gently press on it just to help it set.
Pour the rest of the ganache over it. Wait about 10 minutes and then place the rest of the strawberries as they are on the top.
Place a sprig of fresh mint on the very top.
