No~bake blueberry cheesecake

Do you believe that baking cakes can brighten up a person’s day? I do, because I believe happiness comes from cakes.


This  cheesecake is thick, creamy and flavored with blueberries throughout. It sits in an Oreo and walnut  crust and is topped with a homemade blueberry sauce. It is a  perfect dessert if you’re trying to be good and are cutting down on treats.


This cake made by Chooi Ling. I am fortunate to have such a friend in my life on which I can just rely for anything. Whether it is sharing my feelings, my good and bad times…… We are sharing the same interest,  and even sharing the same birthday!


She is one of the local well-known children’s book illustrator. Her works have appeared in a number of exhibitions and art activities organized by the local as well as the international Art Gallery. She has illustrated several books such as ‘The sweet potatoes that remained’, ‘Kisah si rama-rama’, ‘Last dream of the old oak tree’ and Other Stories.

A best friend is indeed a precious gem, I am fortunate to have found that gem of my life, and she is one of them. Every time I need her she’s there for me just as I’m there when she needs me. And to her, I can only say ‘Thank You’ for being such a gift in my life so far, for making my life better in so many ways, everyday.


We love eating cheesecake. We do believe happiness hides in gifts of food, especially cakes. We baked in the kitchen whenever we feel like eating cake.


Although the process leading to a delicious result could take up to several hours, but it is always worth the wait. Gathering the ingredients, measuring the ingredients, every step along the way done with love and care. Not all attempts are successful, but even the failures are fun because bakers are the only ones who can eat their mistakes and enjoy the taste.


Notes :


I prefer homemade jam, free from the artificial colorings and preservatives, they’re more natural as well as being packed full of the natural flavor of the fruits that you use.


This delicious homemade jam is made with health-boosting ingredients such as blueberries, lemon juice, and cinnamon. According to a study, eating purple-colored fruits can prevent age-related diseases.  Blueberries are fast becoming champions when it comes to their antioxidant and cancer-preventing properties. Combine them with chia seeds and you have a potent recipe! But if you’re all out of blueberry, you could try using other soft berries – like strawberries,  or mulberries. They’ll be just as delicious.


Ingredients :


Blueberry jam

2 cups Blueberries

1/2 cup brown sugar

1/2 cup Water

1 stick cinnamon

1 tbsp chia seeds

1/2 tsp lemon juice


Blueberry cheesecake

Cake base

60g Oreo crumbs

30g walnuts

30g unsalted butter


First layer

65g cream cheese

13g brown sugar

50g plain yogurt

1/2 tsp lemon juice

50g whipping cream

70g blueberry jam

10ml milk

3g gelatin powder


Second layer

65g cream cheese

13g brown sugar

50g plain yogurt

1/2 tsp lemon juice

50g whipping cream

20g blueberry jam

10ml milk

3g gelatin powder


Third layer

65g cream cheese

13g brown sugar

50g plain yogurt

1/2 tsp lemon juice

50g whipping cream

10ml milk

3g gelatin powder

Method :


Blueberry jam

Place 2 cups berries in a saucepan. Crush the berries, heat over medium heat. Bring to a simmer and cook stirring occasionally until berries are soft.

Once the jam is cooking at a rolling boil, stir in 1/2 cup of brown sugar, 1/2 cup water, 1 cinnamon stick (optional), 1 tbsp chia seeds and 1/2 tsp lemon juice. Lower heat to medium-low, continue cooking at a boil stirring constantly. Cook  for  20 to 25 minutes or until the jam thickens and darkens in color.


For the cheesecake


Cake base

Blend 60g Oreo biscuits and 30g walnuts into crumbs. Pour the crumbs into a large mixing bowl.

Pour in 30g melted unsalted butter and stir until the crumbs are all evenly moistened. Pour the crust mixture into your pan. Press the crumbs into the bottom of the pan to make an even layer for the crust. Fridge for 10 minutes.

Set 30g unsalted butter and all cream cheese at room temperature until soft.

Whisk 195g cream cheese and 150g whipping cream with an electric whisk until soft, set aside.

First layer

Heat 10ml milk until slightly warm. Add 3g gelatin powder to the milk and mix until dissolved. Set aside.

Add 1/3 (65g) of cream cheese and 13g brown sugar into the mixing bowl.

Mix 50g plain yogurt with 1/2 tsp lemon juice then mix into the cream cheese mixture.

Add 1/3 (50g) whipping cream  into the cream cheese mixture and fold in with a spatula. Mix in 70g of blueberry sauce and gelatin mixture, mix well. Pour over the cake base. Smoothen the top and refrigerate for about 20 minutes until set.

Second layer

Prepare the second layer of cake with the above steps.

Pour over the first layer. Smoothen the top and refrigerate for about 20 minutes until set.

Third layer


Prepare the third layer of cake by repeating the same steps above.

Pour over the cake smoothen the top and refrigerate for at least 6 hours or over night until fully set.

Before unmolding the cake, wrap the rim of cake mould with a hot towel for 1 minutes
