Don’t you just love a good cheesecake? However, most cheesecakes are loaded with sugar, high-fat processed cream cheese, and other refined ingredients that are not very good for health.
In fact, you can work your magic and transformed the classic cheesecake into a dessert with just half the fat.
As part of the cream cheese has been replaced with yogurt, this makes the cake a tad lighter to the palate and a bit fluffier on the whole.
It is very easy to make and tastes delicious. You can even serve it with any fruit you like. Strawberries, blueberries, or any other berries or cherries also work a treat with this cheesecake.

Notes :
Yogurt is mainly made with milk and lacti acid bacteria, undegoing fermentation. It is beneficial for the intestines and bone mass. Diffierent brands of yogurt have different nutrient content. Low-fat yogurt can be high in sugar, so please read the food label carefully and choose the one with lower fat and lower sugar.
Ingredients:
For the cake base
100g Oreo
20g walnuts
60g melted unsalted butter
Sour cream
200g whipping cream
2 tbsp lemon juice
1/2 tsp salt
For the cake
250g cream cheese
100g brown sugar
200g sour cream
150g fruit yogurt
2 whole eggs
2 tbsp corn starch
1 tbsp vanilla extract
Method :
Preheat oven to 180 degrees C. Cover the outside of a pan with a large sheet of heavy-duty foil. There should be no seams showing (so water can't get in).
For the cake base
Place 120g crackers in a ziptop bag. Use a rolling pin to crush the crackers into crumbs. Pour the crumbs into a large mixing bowl.
Place 20g walnuts in a ziptop bag. Use a rolling pin to crush the walnuts into crumbs. Pour the crumbs into the same mixing bowl.
Pour in 60g melted unsalted butter and stir until the crumbs are all evenly moistened. Pour the crust mixture into your pan. Press the crumbs into the bottom of the pan to make an even layer for the crust.
Fridge for 10 minutes.
Sour cream
Pour 200g whipping cream into a bowl, add in2 tbsp lemon juice, whisk it about one minute or two, until it starts to form nice thick sour cream. Add in a pinch of salt.
For the cake
In a large mixing bowl, beat together 250g cream cheese, 100g brown sugar, 200g sour cream, 150g fruit yogurt
Add 2 whole eggs and whisk until smooth. Add in 2 tbsp corn starch, 1/2 tbsp vanilla extractto the mixture.
Pour filling into the pan. Place the pan in a roasting pan. Add water to the roasting pan.
Place the roasting pan into the oven and bake at 180C for 30 minutes, reduce temperature to 150C, bake for another 30 minutes or until golden brown on top.
Off the oven, let the cheesecake stay in the oven for another 1 hour to finish cooking.
Remove the roasting pan from the oven and let it chill in the fridge overnight. (Yes, it has to have fridge time or it won't taste as good!).
